This Clean-Label Starch Works Just As Well As Modified Variants

Loryma, a Germany-based producer of wheat starches and proteins, has created an innovative new adhesion starch that is free of E numbers, which indicate chemical modification.

The 'Lory Starch Saphir pure' is a starch that offers adhesion through the creation of permeable film that allows steam to flee the coating, making for a reliably crisp breading that works wonderfully well with meat dishes, fish and plant-based products without causing the coating to crumble. This wheat starch also helps to curb fat absorption in deep fat fryers.

Dr. Markus Wydra, head of research and development of starches and proteins over at the Crespel & Deiters Group, which owns the Loryma brand, noted that the advent of this starch solves an issue for food manufacturers who have been forced to eschew adhesion starches in order to be able to declare their products free of E numbers. "With the introduction of Lory Starch Saphir pure, however, we have developed a highly functional wheat-based solution that contributes significantly to a perfectly crisp breading," he stated.
Trend Themes
1. Clean-label Starches - Development of adhesion starches without chemical modifications, suitable for products with clean-labels.
2. Permeable Film Coatings - Use of permeable film coatings for creating reliably crisp breading in meat dishes, fish, and plant-based products.
3. Fat Absorption Control - Development of wheat-based solutions, such as Lory Starch Saphir pure, that help curb fat absorption in deep fat fryers.
Industry Implications
1. Food Manufacturing - Manufacturing of products with clean-labels, requiring the use of adhesion starches without chemical modifications.
2. Restaurant and Food Services - Use of wheat starches and permeable film coatings for creating reliably crisp breading in dishes served.
3. Food Technology and Equipment - Development of solutions for controlling fat absorption and improving coating quality in deep fat fryers, such as wheat-based solutions.
