NewFish's Plant-Based Mortadella is Made with Wakame Seaweed & Bull Kelp

Auckland-based NewFish is reimagining local seafood and its newest release is a 100% plant-based mortadella made from various microalgae and seaweed varieties. Ocean Mortadella features smoked and fermented New Zealand wakame seaweed and bull kelp with plant-based back fat and microalgae protein. The bright green sausage packed with cubes of fat makes the most of underutilized marine sources to add value to commercial products and add value to the plant-based seafood industry in a distinctive way. Developed by co-founder and chef Vaughan Mabee, Ocean Mortdatella has been validated in New Zealand's Amisfield Restaurant.

NewFish's Ocean Mortadella is currently in the final stages of development and it is on track to be released internationally for pre-sale soon. Ultimately, NewFish aims to reimagine New Zealand’s seafood and replenish our relationship with the ocean.
