Color-Changing Ice Creams

Manuel Linares' Xamaleón Ice Cream Changes Color As You Lick It

As if ice cream wasn't great enough on its own, Manuel Linares found a way to develop a flavor that changes color as you lick it. The Spanish physicist and chef created Xamaleón out of entirely natural ingredients as well, appealing to the health conscious who still have a sweet tooth.

Xamaleón tastes like a mixture of fruits. The initial blue hue is coated with a 'love elixir' before it is served. This along with oxidization and temperature is what gives the ice cream its transformative property. But like a good magician, Manuel Linares is refusing to give up his secret while we works on obtaining a patent for the recipe. He is also working on two new flavors: one that reacts to ultraviolet light in clubs and another that turns from pink to white.
