Japanese Giant Jellyfish Ground into Space-Age Caramel Sweets

Japan is combating an influx of giant jellyfish by doing what only makes sense--grinding them up to use as a base for jellyfish candy. The curious confection combination was concocted by students at Obama Fisheries High School, and capitalizes on Japan's current raw caramel craze.

To make the jellyfish candy, sugar, starch syrup and jellyfish powder are mixed into a caramel. The jellyfish powder itself is created by boiling jellyfish--trapped in fixed nets at Fukui prefecture--and then grinding the paste that results until it's of a fine consistency.
