NotCo Created NotTurtle Soup with Advanced AI Technology

NotCo is known for its AI-created product suite of NotMilk and NotChicken, and the food-tech innovator unveiled a plant-based turtle soup, NotTurtle Soup, to replicate the taste and texture of real turtle meat and support the global green sea turtle population.

NotCo’s AI technology, Giuseppe, analyzed more than 300,000 plant species and evaluated 260 quintillion potential combinations to mimic green sea turtle meat authentically. Five proteins that closely mimic the qualities of turtle meat were chosen by the AI. "If Giuseppe can replicate Green Sea Turtle Soup in just two weeks, not only are we providing an alternative to an endangered species, it’s a way to say ‘just imagine what else we can do with technology," said Matias Muchnick, CEO of NotCo.

NotCo plans to release a documentary depicting the process of creating this soup and host an online class to share the recipe.
