The Belgium-based animal-free dairy brand Those Vegan Cowboys have announced its first animal-free cheese crafted with a premium recipe that focuses on the future of the industry. The cheese is crafted using microbial caseins and with the brand's precision fermentation machinery known as Margaret, which is a cow crafted out of metal. The cheese product is focused on the future of the dairy market and uses dairy-identical caseins that are obtained via the brand's precision fermentation process to ensure the utmost attention to a high-quality product.

Project Director Will van den Tweel spoke on the Those Vegan Cowboys cheese saying, "Thanks to the caseins, the cheese of our stainless steel cow potentially has comparable texture and other properties dairy cheese has. And yet it is completely free from animal products. Any cow-free cheese is now possible."
