Muse School Encourages Plant-Based Diet from a Solar Power Kitchen

The Muse School in Los Angeles, California, is perhaps one of the most sustainable restaurants in the world -- at least according the Green Restaurant Association. The private school cooks meals in a kitchen run by solar power while the ingredients are grown right on the property. Those ingredients? All vegetarian, which encourages a plant-based only diet.

Cofounder Rebecca Amis of the Muse School says, "We're an environmental school. We thought, we can't call ourselves environmental if we continue to eat meat and dairy." Although the system currently in place took a couple of years to fully instate, the difficulties were unavoidable. Dubbed OMD or "one meal a day for the planet," the Muse School's program has expanded to many of the student's homes as well, showing its beneficial influence.
