The Metamorphosis Menu Explores Fermentation, Oxidation & More

London bar Baccarat, housed within the Harrods department store, launched the Metamorphosis Menu as a means of exploring fermentation, caramelization and oxidation methods. In all, there are 16 cocktails on the menu, four of which are non-alcoholic options, that are elegantly served in Baccarat crystal glassware.

All of these drinks have a core component that undergoes some sort of transition to create a multi-layered experience for the palate. Mini Reality is described as the most balanced and approachable item on the menu and it takes the form of a gin-based serve with nuanced flavor and texture from ingredients like peach, lemon thyme and Iberico bone extract. Also on the menu, there's the non-alcoholic V&T, prepared with buffered reserva Sherry vinegar, pineapple, ice verjus and tonic.
