You will definitely need rice spring roll wrappers, plus unsweetened shredded coconut instead of rice. Monica used fruit including strawberries, mango, peaches, grapes and apples in the fruit sushi, but you can change this up to include your favorites. Instead of a sweet and sour or spicy dipping sauce, you can make a more complimentary version with pomegranate juice, freshly squeezed lime juice and freshly squeezed orange juice.
