The Chi Kitchen brand offers "fermented cabbage that is brined with salt and combined with chopped garlic and onions, julienned ginger and Korean red pepper" -- and is flavored with either a fish sauce or a miso paste as part of the vegan option. Luong creates all of the products by hand and uses locally sourced ingredients, a process that she learned to appreciate with the lessons her father taught her through his fishing and gardening hobbies.
