Nine Lives' Menu Features Ingredients Like Avocado Skins & Croissants

London's Nine Lives bar created a nine-piece sustainable cocktail menu that features ingredients that would otherwise go to waste. The menu—which has cocktails named after 90s hip-hop tracks—features ingredients collected from the bar itself and its garden, as well as businesses in the area.

While the Santeria is made with mezcal-infused avocado skins, mint tea and homemade rosemary syrup, Top Rock features almond croissants that are sourced from local coffee shops, plus rye whiskey and almond liqueur. Nine Lives also uses leftover yolks from other serves and garnishes made from wasted desiccated coconut.

The sustainable cocktail menu itself is made from repurposed plastic from sources like carrier bags, bottles, bubble wrap and ocean plastics.
