Not Company Uses Its Giuseppe Algorithm to Test Its Formulas

Not Company, a Chile-based startup that specializes in vegan-friendly dairy options, recently expanded into the US market after successfully launching a variety of plant-based cheese, milk, and condiment products in Latin America.

To create its products, Not Company largely relies on an algorithm it created called Giuseppe, which is capable of learning and logging different combinations of plants that can replicate the taste, texture, and function of animal products. By using plant-based ingredients, the company is able to create more sustainable alternatives that are an excellent source of calcium, vitamin B12, and vitamin D.

Not Company's NotMilk is currently available from participating Whole Foods locations in the US, where consumers can pick up the plant-based alternative in both reduced fat and whole variations. A full selection of the company's products are also available in Chile, Brazil, and Argentina.
