This Adapted Version of a Classic Summer Dish Includes Pistachio Pesto

Traditionally made with sliced fresh mozzarella, tomatoes and basil, a caprese salad can easily be customized to include surprising new ingredients. Food blogger Jess of How Sweet It Is went the fruity route, changing the simple Italian recipe to include strawberries. The Strawberry Caprese also has a pistachio pesto dressing.

To make your own summer-appropriate caprese salad at home, you will need ingredients like cherry tomatoes, strawberries, ciliegine mozzarella balls, basil, sea salt and cracked black pepper. The pistachio pesto is made with shelled pistachios, more basil leaves, fresh mint, a garlic clove, grated pecorino romano cheese, extra virgin olive oil and salt. For bonus points, you can use herbs you grew in your own home garden or add grilled corn.

The transformational meal is refreshing, but still a filling and satisfying dish.
