Aeroir is a Meringue Made from Four Different Cities' Re-Created Smog

Urban air pollution is something many people should be concerned about -- not just those living in China. To raise awareness around this environmental issue, the Center for Genomic Gastronomy and Edible Geography has created a fluffy meringue dessert made using re-created urban smog from four different cities. They sought the advice of University of California Riverside researchers when creating the urban air pollution.

Coming together as a Smog Tasting cart, the project will be part of the Ideas City Festival in New York City. Zackery Denfield, co-founder of the Center for Genomic Gastronomy, says, "Most people ask ‘Is it safe to eat?’ and we reply ‘Is it safe to breathe?' We think that when people are laughing they are thinking, and we get a lot nervous laughter." This is the type of reaction that could signal change.
