The vegetarian recipe is adapted from Mixingbowl.com. To make your own zucchini waffles at home, you will need zucchini as well as common pantry ingredients such as vanilla extract, sugar, skim milk, kosher salt, eggs, cooking spray, cinnamon, baking powder and all-purpose flour. Once everything is cooked, you can serve them with sweet butter and maple syrup. You can also get more creative with the toppings.
