This marks the first time in the latter publication's 46-year history that any spirit has earned a flawless rating. Cazcanes Tequila's Nuestras Raíces is crafted in a remote jungle village in Jalisco, Mexico, by third-generation distiller Humberto Alvarado. The methods employed in the crafting of this expression predate the formal tequila category. Alvarado cooked agave with wood-fire steam in a low-pressure autoclave, shredded fibres with a salvaged 50-year-old [Chevy](https://www.trendhunter.com/trends/equinox-ev-electric-juice) inline-6 engine, and distilled it with water from a natural spring chosen generations ago by his family. Thus, Nuestras Raíces offers a taste of [authentic, pre-industrial production methods](https://www.trendhunter.com/trends/dobel-tahona-tequila-blanco) that cannot be easily replicated.
