According to the head chef at Purple Patch, sisig as a dish dates back as far as the 18th century, but the modern incarnation of the dish was invented during WWII. The GIs in the Pacific would eat everything on the pig except the head, and so the Filipinos selling food to the soldiers would use the head meat for their own dishes. Purple Patch's sisig, however, is made from the more familiar [belly and shoulder cuts](https://www.trendhunter.com/trends/slowcooked-pork-carnitas).
