The Perennial is a San Francisco restaurant that champions progressive farming and eco-friendly dining. While many restaurants have explored the concept of farm-to-table dining, The Perennial has designed a way to make restaurants even more sustainable.

The urban eatery is designed to mediate the effects of climate change by making a positive agricultural impact. One of the ways that The Perennial champions this type of progressive farming is through [aquaponics](https://www.trendhunter.com/trends/advanced-indoor-farming). The restaurant operates a greenhouse that turns leftover food scraps from the restaurant into fish food. The fish food scraps are converted into ammonia-rich waste which helps to fertilize more food for the restaurant. The effect is a closed-loop system that helps make urban dining more sustainable.
