[Native Foods](https://www.trendhunter.com/trends/italian-beef-sandwich) is putting a plant-based twist on birria this month with its new Birria Quesadilla.

For those unfamiliar, Birria is traditionally a spicy and savory Mexican beef stew featuring tender, fall-off-the-bone meat. For its latest monthly Chef’s Special, Native Foods is offering its own interpretation of the dish in the form of a quesadilla. The new Birria Quesadilla consists of [plant-based birria beef](https://www.trendhunter.com/trends/quesabirria-taco) and plant-based cheddar cheese stuffed into a flour tortilla. The tortilla is then brushed with the consommé before it's tossed on the griddle for an extra flavorful experience. The quesadilla is also served with a flavorful birria consommé that's topped with fresh onion and cilantro.

The new plant-based Birria Quesadilla is available now through the end of October at all Native Foods locations.
