# Middle Eastern Subs Whitebox Eatery's Falafel Sandwich Can Barely Be Contained to the Bun By Laura McQuarrie | Published 2015-03-17 | Lifestyle Source: Trend Hunter, https://www.trendhunter.com/trends/falafel-sandwich References: [stltoday](http://www.stltoday.com/entertainment/dining/restaurants/reviews/upscale-touches-grace-fast-casual-whitebox-eatery/article_19940317-738b-5b3a-8575-a1fe56f7bb21.html) & [whiteboxeatery](http://www.whiteboxeatery.com/) With white walls, tables and chairs, [Whitebox Eatery](https://www.trendhunter.com/trends/whitebox-and-bruichladdich) definitely lives up to its name, setting the perfect backdrop for tasty creations like its [falafel sandwich](https://www.trendhunter.com/trends/greek-halloumi-wrap) to shine. While the decor may me simple, eats at this fast-casual St. Louis restaurant are certainly not. Rather than serving its falafels in a pita, this sandwich gets an upscale reinvention by being served like a [sub sandwich on a sliced baguette](https://www.trendhunter.com/trends/spicy-sandwiches). With a bite, you'll get a mouthful of chickpea fritters, roasted red pepper, crumbled feta cheese, fresh arugula, topped by a lemon-olive mayonnaise dressing. This mayo is a staple for other sandwiches served at the Whitebox Eatery, including the Italian Sandwich, made up of coppa, salami, mortadella and provolone. ## Trend Insights (Trend Hunter) - Score: 1.3/10 - Popularity: 29% | Activity: 2% | Freshness: 8% - Audience gender: 50% men, 50% women - Primary generations: Millennial - Top markets: North America ## Categories [Trend Hunter](https://www.trendhunter.com/trends) > [Lifestyle](https://www.trendhunter.com/lifestyle) > [Food](https://www.trendhunter.com/food) ## Key Themes ### Why This Trend Is Growing - **Reinvented Sandwiches:** The trend of serving traditional sandwiches with a twist, like the falafel sandwich on a sliced baguette, offers an opportunity for innovative flavor combinations and unique menu offerings. - **Gourmet Fast Casual:** The rise of fast-casual restaurants offering high-quality ingredients and upscale dining experiences allows for the creation of gourmet sandwiches like the falafel sub at Whitebox Eatery. - **Creative Condiments:** The use of unique dressings and sauces, like the lemon-olive mayonnaise on the falafel sandwich, presents a chance for condiment innovations that can elevate the flavor profiles of various sandwiches. ### Industries Being Reshaped - **Restaurant Industry:** The restaurant industry can explore the opportunity to create reinvented sandwiches and gourmet fast-casual concepts to cater to consumers' increasing interest in unique and elevated dining experiences. - **Food Delivery Services:** Food delivery services can partner with innovative fast-casual restaurants like Whitebox Eatery to offer customers gourmet sandwiches and unique flavor combinations directly to their doorsteps. - **Condiment and Dressing Manufacturing:** Manufacturers of condiments and dressings can develop new products and flavors to meet the demand for creative dressings and sauces that enhance the taste of sandwiches and other food items. ## Related on Trend Hunter - [Middle Eastern Cuisine-Inspired Wraps](https://www.trendhunter.com/trends/subway-wraps.md) - [Italian Salad-Inspired Sandwiches](https://www.trendhunter.com/trends/caprese-sandwich.md) - [Remixed Italian Sandwiches](https://www.trendhunter.com/trends/di-stefano-mozz.md) - [Mediterranean Street Food Sandwiches](https://www.trendhunter.com/trends/arayes-flatbread.md) - [Griddle-Finished Baked Falafels](https://www.trendhunter.com/trends/griddlefinished-baked-falafel.md) - [Spicy Fajita-Style Sandwich](https://www.trendhunter.com/trends/spicy-fajita-chicken-sandwich.md) - [Crispy Oven-Baked Sub Sandwiches](https://www.trendhunter.com/trends/ovenbaked-subs.md) - [On-The-Go Middle Eastern Dining Concepts](https://www.trendhunter.com/trends/little-baba-by-amal.md) - [Chef-Crafted Mediterranean Menus](https://www.trendhunter.com/trends/yalla-falafel.md)
