There are countless versions of the classic chocolate chip cookie that have been created over the years and Fancypants Baking Co. is introducing a new line of cookies made with upcycled ingredients. The Okara Chocolate Chip Cookies are made with okara, a by-product of the process of making soy milk. Although okara is typically discarded, it has the potential to be turned into flour through a drying and milling process.
The Okara Chocolate Chip Cookies launched with Imperfect Foods help to reduce food waste and support a healthier food system. The partnership bweteen Fancypants and Imperfect Foods helps to make sure that surplus food and imperfect produce can be put to good use, rather than completely going to waste—and consumers benefit from getting to enjoy products like light and crispy cookies.
