UK-based "premium dairy merchants" The Estate Dairy are one new company meeting this need. Using unhomogenized milk from Jersey and Guernsey cows, the barista milk startup provides whole milk, semi-skimmed milk and 1% milk varieties. Their milk was also on hand during last year's London Coffee Festival.
