Faced with newly developed lactose intolerance and an egg allergy during pregnancy, plus a heightened risk of breast cancer, Kimberle Lau eliminated certain foods from her diet and founded Bake Me Healthy. Motivated by personal challenges, Lau crafted plant-based baking mixes void of the top nine allergens, using upcycled and sustainably sourced ingredients, providing a safe haven for those with dietary restrictions seeking delicious, inclusive treats. All three of the brand's products are Upcycled Certified by the [Upcycled Foods Association](https://www.trendhunter.com/trends/atorias-family-bakery-mini-upcycled-naan). While the [banana bread and muffin mix](https://www.trendhunter.com/trends/banana-bread-mix) incorporates surplus or irregular bananas that were dehydrated and turned into a powder, the oatmeal pancake and waffle mix makes the most of the protein-packed pulp leftover from sunflower oil production. ## Trend Insights (Trend Hunter) - Score: 1.1/10 - Popularity: 7% | Activity: 8% | Freshness: 19% - Audience gender: 30% men, 70% women - Primary generations: Millennial - Top markets: North America ## Categories [Trend Hunter](https://www.trendhunter.com/trends) > [Lifestyle](https://www.trendhunter.com/lifestyle) > [Food](https://www.trendhunter.com/food) ## Key Themes ### Why This Trend Is Growing - **Wellness-focused Baking:** Opportunity to create innovative baking products that promote wellness and cater to dietary restrictions, using upcycled and sustainably sourced ingredients. - **Inclusive Treats:** An opportunity to develop inclusive baked goods that are free from the top nine allergens, providing safe options for individuals with dietary restrictions. - **Upcycled Foods:** The trend of incorporating upcycled ingredients into baking mixes, reducing waste and promoting sustainability. ### Industries Being Reshaped - **Baking Mixes:** Disruptive innovation opportunity lies in creating baking mixes that prioritize wellness, inclusivity, and sustainability through the use of upcycled ingredients. - **Health Food:** Opportunity to expand the health food industry by offering inclusive treats that cater to dietary restrictions and promote overall wellness. - **Food Waste Management:** Opportunity to develop solutions and innovations in the food waste management industry by incorporating food by-products and upcycled ingredients into baking mixes. ## Related on Trend Hunter - [Upcycled Baking Mixes](https://www.trendhunter.com/trends/upcycled-baking.md) - [Health-Focused Plant-Based Baking Mixes](https://www.trendhunter.com/trends/plantbased-baking-mix.md) - [Upcycled Pancake Mixes](https://www.trendhunter.com/trends/plant-based-pancakes.md) - [Climate-Friendly Cupcake Mixes](https://www.trendhunter.com/trends/vanilla-cake-cupcake-mix.md) - [Farmer-Supporting Baking Mixes](https://www.trendhunter.com/trends/gluten-free-baking-mixes.md) - [Nutritious Pancake Mixes](https://www.trendhunter.com/trends/nutritious-pancake-mix.md) - [High-Fiber Baking Mixes](https://www.trendhunter.com/trends/goodwheat-mixes.md) - [Upcycled Oat Protein Cereals](https://www.trendhunter.com/trends/upcycled-oat-protein-cereal.md) - [Upcycled Peanut Butter Cookies](https://www.trendhunter.com/trends/peanut-butter-cookies.md)
