This easy DIY veggie meatball recipe is the perfect way to be eco-friendly in the kitchen and never waste leftover veggies again.

The recipe calls for all the leftover veggies in the kitchen. Use whatever veggies didn't get eaten and dice them up into small pieces. In a blender combine oil, garlic, cilantro, cumin seeds, feta and an egg or two. Make it into a puree and then simply roll the concoction into balls. Using hot oil, fry the balls of veggies.

Often the leftover veggies have enough seasoning, so adding extra salt and pepper isn't really necessary. The only important part of this recipe is the egg that holds the veggie meatballs together. These quick reinvented leftovers are great for pasta or just for snacking.
