This Vegan Chili Recipe is Made with Quinoa and Cashew Milk

This rich homemade vegan chili might not contain any meat or tomato sauce, but it is quite the filling and hearty meal complete with cauliflower, quinoa and cashew milk. The innovative take on creating a white chili offers an unconventional medley of flavors mixed together to create a refreshing and spicy stew.

Rather than opting for a tomato base, this white chili uses cashew nut milk as the base mixed with a vegetable broth to create a creamy consistency. To that traditional chili spices such as cumin, chili powder, paprika, garlic, salt and pepper are added along with untraditional veggies such as cauliflower, fresh avocado, jalapenos and white beans. The dish is served with cilantro and crushed tortilla chips to complete the meal.
