This Autumnally Appropriate Recipe Makes a Hearty Meal in Cool Times

If you are looking for a hearty and autumn appropriate meal to make, this stuffed pumpkin is a filling and delicious option perfect for cold weather. From Liz of Carpe Season, the Stuffed Pumpkin Cave of Wonders essentially contains a baked version of a fall-themed stew.

To recreate this dish at home, you will need delicious ingredients such as brussel sprouts, green beans, baking apples, baby white potatoes, leeks, carrots, parsnips, butternut squash, garlic, parsley, chicken thighs and chicken stock to all go inside a hallowed out cheese or cinderella pumpkin. This recipe used a 10 pound pumpkin full of all these foods, but you could also try serving individual sized gourds with the mixture portioned into each at a dinner party.
