Created by Richa at the blog My Food Story, the protein-packed vegetable cutlets are intended to be enjoyed on their own as an appetizer, but you could also enjoy them as part of a sandwich and make it a meal.

The quinoa patties recipe contains beetroot and spinach, which gives them an unusual yet visually appealing hue. In addition to cooked quinoa, you will also need potato, oats, goat cheese, ginger paste and garlic paste. Richa suggests serving them warm with a side of yogurt for dipping.
