Purple Cauliflower Soup is Bright and Bold

Whether it's a cold winter night, a hot summer day, or anything in between, purple cauliflower soup is a delicious comfort food for the soul. Served either piping hot or bone-chilling cold, this colorful cuisine will put a smile on faces of even the fussiest eaters.

Purple cauliflower soup is a tasty treat that is sure to light up any dinner table. The star of this show is the vibrantly colored cauliflower, a much more eye-pleasing version of its plain and pale cousin. Flavor (and color) is intensified by adding purple shallots, purple garlic and a couple pinches of salt and pepper. Surprisingly, the minimal ingredients go a long way in this healthy dish. But why stop there? Make the presentation even more pleasing by topping it with roasted red pepper puree, a drizzle of olive oil and some crumbled goat cheese.
