As Refinery29 points out, this is an excellent use of leftover pumpkin puree whether it's post Halloween jack-o-lantern carving or for Thanksgiving. The recipe utilizes the Winter Luxury squash, which has a smooth texture and flavor. The roasted pumpkin puree is not only caramelized, but spiced with fall seasoning like allspice, cinnamon, ginger and nutmeg. The pudding is also garnished with a brown sugar cream and topped with a seeded brittle. Once chilled you can layer it with whipped cream as well.
