These Sun-Dried Tomato Pinwheels are a Heat-Free Summer Appetizer

These savory pinwheel snacks from the 'Minimalist Baker' blog are the perfect appetizer for a sweltering hot day. As summer temperatures continue to climb, many people are looking for ways to avoid using the oven. These savory pinwheels are made without the use of heat, which makes them a perfect choice when it's too hot to cook.

The pinwheel snacks only require eight ingredients and can be assembled in as little as 15 minutes. The recipe is deigned to be vegan-friendly, however you can also substitute non-vegan ingredients if you wish. Once you have all of the necessary ingredients, begin by combining the vegan cream cheese with the sun-dried tomatoes, spinach, garlic and vegan cheese. Divide the filling between two flour tortillas and spread the mixture to the very edge. Top your tortillas with fresh basil then roll them up tightly. Once the tortillas are rolled up, use a sharp knife to slice them into half inch rounds. You should be left with about 20 pinwheel snacks that will serve as the perfect appetizer for your next summer party.
