This Rich Pasta Dinner is Made With an Almond-Infused Ricotta Sauce

Often foodies gravitate towards pasta dinners as the ideal meal after a long day. While traditional pestos are delicious, they're often filled with heavier ingredients such as oils and dense cheeses. To make the traditional recipe lighter and packed with protein, this version incorporates ground almonds, ricotta and melted butter to achieve that same great taste with fresh ingredients.

This unconventional pesto begins with somewhat counterintuitive ingredients, such as melted butter and milk. These products take the place of heavy olive oil to give the pesto its creaminess. In addition, basil, ricotta and ground almonds are added for flavor and texture as everything is pureed in a food processor.

The recipe also mentions that pesto can be a mix of green leafy veggies, including kale and spinach, if you feel like adding nutrients to your supper.
