Inspired by the tradition of making king cakes––especially by the unique and vibrant adaptations of New Orleans culture and cuisine––this wonderfully sweet and fatty snack combines fried sweet potatoes with sugar, cinnamon, cream cheese, praline sauce and chopped nuts. To top it off is sanding sugar in the Mardi Gras colors: gold, purple and green.

Graham Blackall's recipe for this colorful poutine might not be a feast for everyone's eyes, but it would certainly be worth a taste! I suspect that it's one of those odd and assorted mixtures that looks questionable and ends up tasting unquestionably good.
