This Twist on the Classic Indian Lassi Uses Pineapple and Coconut

This recipe for a carmelized pineapple drink from the 'How Sweet It Is' food blog is a twist on the classic Indian lassi.

Slices of fresh pineapple are heated over a skillet and gently browned with a combination of coconut oil, butter and a sprinkling of brown sugar. Once the rings have the right caramel color, the cooled rings are blended with a creamy base of coconut milk, yogurt, as well as spices like cinnamon and cardamom for flavor.

To give a hint at what's in the creamy blended lassi, it's suggested that a few of the golden pineapple rings should be saved as garnishes to top the shake, with another generous sprinkling of cinnamon. While this recipe might take a little more effort to prepare than a classic lassi, the unique flavor seems well worth the additional time.
