The key with this recipe lies in the marinade. This marinade consists of chopped garlic, sugar and salt that is smashed into a paste using a mortar and pestle, before soy and fish sauce are added. Spoon this marinade over spatchcocked and slit chicken, which can then be marinated in the refrigerator. Then prepare the glaze by heating oil and adding crushed garlic. Then add orange-red annatto seeds and cook until the oil turns a lovely orange color. You can even use paprika instead of annatto seeds.
