These fruit parfaits are for people are are not all in when it comes to a healthy diet. Created by Jess from the food blog How Sweet It Is, the Brown Butter Shortbread Parfaits with Coconut Cream are more of a dessert take on a yogurt-based breakfast.
Topped with a triple berry sauce and fresh mint, the bowls are described as "high maintenance fruit parfaits." The shortbread is made with brown butter and lots of vanilla bean, the crumbs of which also go on top of layers of coconut whipped cream.
You could easily customize the parfait to be more of a July 4th trifle as well. Jess used peaches, mango, strawberries, blueberries, blackberries and raspberries in hers, but you could stick to just red and blue fruits.
