After dethroning Chef Masaharu Morimoto in a January episode of Iron Chef America, Moto chef Homaro Cantu has taken even more steps toward stardom. Concerned with the environment, the Chicago chef avoids the use of paper in his kitchen or anywhere else in the restaurant.
So how do patrons know what’s for dinner? To avoid waste, Cantu has invented edible menus that are completely safe for consumption. Using class 4 lasers in his highly secretive work environment, Cantu isn’t willing to reveal the specific tricks of the trade, but assures the public he has already patented the innovation.
The chef stands by the fact that he is not in it for the fortune, but for the control of technologies. He hopes to take his inventions open-source in the future. Until then, however, the rest of the world will have to wait to see what new culinary creations he may dream up next.
