You might have heard of the carb-conscious substituting pasta for zucchini, spaghetti squash, spinach or a number of other vegetables, this dish is going with the less heard-of cucumber noodle. From Adrianna Adarme at the food blog A Cozy Kitchen, this recipe for Chinese Cucumber Noodle Salad comes with sesame-crusted tuna. This is also a refreshing dinner as you savor the remaining hot days of summer.

You will need a spiralizer, but it is otherwise fairly easy to prep and make, taking just 20 minutes total. You will need cucumber in addition to rice wine vinegar, sesame oil, garlic, sea salt, red pepper flakes, sushi-grade tuna, white or black sesame seeds (or a mixture of both) and cilantro.
