This massive homemade cookie cake turns the popular bite-sized Oreo biscuit into a gargantuan dessert perfect for any chocolate lover. This recipe recreates the popular vanilla cream cookie using brownies and white mountain frosting.

The two cookie layers are made using a brownie mix poured into a large round cake pan with ribbed edges. Once baked, you can carve out the Oreo cookie logo and the little floral designs that circle the perimeter of the top cookie layer. The two brownie cake pieces are sandwiched together using a white vanilla frosting made from egg whites, corn syrup, sugar, water and vanilla. If you prefer you can turn this gigantic cookie into an ice cream cake by using softened vanilla icing in the centre and freezing the large cookie before serving it to guests.
