Even if you do not have any left over red velvet cake, it is easy to recreate the mix in a few simple steps. Once you have your cake baked and ready to turn into pops, you can add chocolate chips to act as seeds. Place the rounded ball onto a stick, then dip the cake balls into a cream cheese frosting that is a mixture of cream cheese, butter, sugar, sour cream and vanilla.

Finally dip the pops into a melted green and white chocolate mix and paint on dark green lines with a clean Q-tip, to give it that authentic watermelon look.
