To introduce a bit of green into her diet, Joy turned to this earthy Spinach Soup. Helpings of garlic, crushed red pepper flakes, red potatoes and of course, spinach, gave way to its coloring. And while the recipe is healthy, she made it quite rich with croutons doused in butter.
