The Parisian 'WikiBar' Aims to Revolutionize Ice Cream Eating

Introducing the future of ice cream eating: WikiPearls. In collaboration with French designer Francois Azambourg, founder and Harvard bio-engineer professor David Edwards has developed soft edible skins made from natural food particles that envelop the donut-hole sized balls of ice cream. Not only does the grape-like skin prevent the ice cream inside from melting in your hand, it comes in flavors ranging from coconut, hazelnut and peanut.

The Parisian WikiBar designed by Mathieu Lehanneur is situated near the Louvre museum, the shop selling the WikiPearls is a simple, minimalist space that is an experimental laboratory as well as a retail ice cream shop.

The inspiration behind WikiCell, the soft edible skin was in finding a fun way to reduce plastic waste. Each bite-sized ‘ball’ contains 50 calories and comes in three flavors: mango with a coconut skin, vanilla with a peanut skin and chocolate with hazelnut skin. Edwards is looking forward to expand this novelty way of eating with yogurt and cheese in the near future.
