Joy the Baker’s Creamy Pumpkin Pie Bars follows up on a recipe that she released in the fall of 2008. As she was only just figuring out the artistic direction and general voice of her blog then, she has decided to do justice to autumn snack by re-introducing it to her readers.
Joy has infused these Creamy Pumpkin Pie Bars with a thicker crust this time around. She coats the baked pumpkin, cream cheese and egg with a generous layer of shortbread crumble, one that is made with brown sugar, oats and chunky pecans.
