Joy the Baker’s BLT Corn Salad Wraps provide a healthy alternative to standard sandwiches. Instead of using slices of break or tortilla wraps, she enfolds the ingredients in lettuce leafs, creating a type of handheld salad.
Joy charred ears of corn for the Salad Wraps. Although many would place the vegetable in the oven, she burnt it slightly on her stove top, crackling the kernels until they turned light brown. She then mixed together ground avocado, green onions, lime and burnt bits of bacon in a single bowl. Dashes of chilli powder and paprika were sprinkled over the top prior to her dropping generous spoon fulls of the chunky sauce into the thin green sheets.
