Hot pot dinners are eaten all over Asia, especially when the weather gets colder.
Hot pot dinners are very communal where families and friends gather around in the fall or winter and dine together over a boiling aromatics, usually accompanied by beer. This seasonal meal can be broth-based or like Luxiare’s, rice-based. In broth-based meals, a variety of raw meat and vegetables such as beef, lamb, chicken, daikon radish, shrimp and watercress are cooked by each person in the shared communal pot. The pots are usually placed on a portable gas stove in the center of the table. For rice-based, the rice and ingredients usually preserved like Chinese pork sausages, rehydrated shiitake mushrooms and Chinese bacon are cooked until the rice at the bottom becomes crispy golden layer and you can smell the aromas of the sweet Jasmine rice.
